Ingredients:
400 g bee hoon
300 g cabbage
300 g cai xin
1 piece small carrot
3 eggs
4 small onions
3 garlic
½ tsp salt
¼ tsp sugar
¼ tsp pepper
1 ½ cup water
Cooking Method:
- Soak bee hoon in water and drain dry when soft.
- Cut the cabbage and cai xin and soak in water for 1 hour.
- Shred the carrot and slice the onions.
- Mince the garlic.
- Boil the cabbage and cai xin separately from the shredded carrot. Drain dry when cooked.
- Beat the eggs.
- Heat up a pan and add some oil to fry the eggs. When cooked remove the fried eggs and cut them into strips.
- Heat oil in a pan and add in the onions and garlic. Fry till fragrant.
- Add 1 ½ cup of water and bring it to a boil.
- Add salt and sugar to taste.
- Add soaked bee hoon and stir well until cooked. Turn off the fire.
- Add the vegetables and pepper to the cooked bee hoon and mix well.
- Garnish with shredded eggs, carrot and fried shallots.
