Fried Bee Hoon

Ingredients:

400 g bee hoon

300 g cabbage

300 g cai xin

1 piece small carrot

3 eggs

4 small onions

3 garlic

½ tsp salt

¼ tsp sugar

¼ tsp pepper

1 ½ cup water

Cooking Method:

  1. Soak bee hoon in water and drain dry when soft.
  2. Cut the cabbage and cai xin and soak in water for 1 hour.
  3. Shred the carrot and slice the onions.
  4. Mince the garlic.
  5. Boil the cabbage and cai xin separately from the shredded carrot. Drain dry when cooked.
  6. Beat the eggs.
  7. Heat up a pan and add some oil to fry the eggs. When cooked remove the fried eggs and cut them into strips.
  8. Heat oil in a pan and add in the onions and garlic. Fry till fragrant.
  9. Add 1 ½ cup of water and bring it to a boil.
  10. Add salt and sugar to taste.
  11. Add soaked bee hoon and stir well until cooked. Turn off the fire.
  12. Add the vegetables and pepper to the cooked bee hoon and mix well.
  13. Garnish with shredded eggs, carrot and fried shallots.

  7. 热锅,放油,煎鸡蛋。取出,切成条状。
  8. 热锅,放油,加入洋葱和蒜头。 爆香.
  9. 加入1½ 杯清水,煮滚。
  10. 加入盐和糖(依个人口味).
  11. 加入米粉,拌炒均匀。熄火。
  12. 在米粉里加入菜和胡椒粉,拌均匀。
  13. 用鸡蛋丝、红萝卜和炸葱头点缀。
